What is Lactose?
Lactose is nature’s sugar. Lactose is the carbohydrate that is found in milk. It has a very low sweetness level compared to regular table sugar, sucrose.
Lactose is extracted from milk by PGP International to provide the functional properties required by today’s food industry. Various mesh sizes have been developed for specific food applications.
Primary functions of lactose are:
- To provide bulking
- To provide a low level of sweetness
- Act as a carrier for drugs
Specific Food Applications:
- In confection products, the lactose acts as a sweetener while giving a white appearance to milk chocolates. Due to the specific hydroscopic properties of lactose, the chocolate has less issues with bloom
- In pharmaceutical applications the lactose is used as a excipient in direct compressible tablets.
- In infant formulas, the lactose is a low sweetness, natural source of carbohydrates.
